Debates on now-popular Facebook food groups often have us wondering: does a general consensus on restaurant etiquette exist in Pakistan?

After all, anyone who eats out frequently can tell you they've seen everything from belligerent customers (and servers!) to domestic staff being treated as second-class citizens by their employers.

Images spoke to well-known restaurateurs and cafe owners to find out what the last word is on how to put your best foot forward when you go to an eatery.

1) How much should you tip?

It seems like tipping 10% of the bill isn't the universally accepted amount.
It seems like tipping 10% of the bill isn't the universally accepted amount.

While all restaurateurs agree that a minimum tip amounting to 10% of your total bill is necessary, some would appreciate if their customers were more generous than that.

While observing that "tipping is something that is not seen in Pakistan", Ayaz Khan (Okra) suggests that customers should tip at least give 14 to 16% of their bill.

Nilofer Saeed (Neco's) says that she'd like to see customers who spend over an hour at her cafe give at least 20% of their bill as tip.

Sikander Rizvi (Xander's) reasons that tips are important because "it's usually half, if not the majority, of servers' income."

"[Servers] work extremely hard and long hours to serve the customer," he says. "Many have long commutes back home before they need to repeat the entire process. In Pakistan, many of the staff are the sole earners for their family."

2) What's the deal with bringing children to restaurants?

Restauranteurs Ayaz Khan, Nilofer Saeed and Sikander Rizvi agree: children are welcome, but need to be monitored by their parents
Restauranteurs Ayaz Khan, Nilofer Saeed and Sikander Rizvi agree: children are welcome, but need to be monitored by their parents

Cafes are generally children-friendly, so long as they behave!

While Lal's believes that "children should have a great experience" at their eatery, they hope parents monitor their children to ensure they aren't disturbing customers on adjacent tables. FLOC's Fouzia Siddiqui says her cafe prefers to entertain children on the weekends.

Parents also need to be mindful of the time of day.

Nilofer Saeed (Neco's) shares, "Bringing kids to a restaurant is part of our culture but when children are brought out past 10pm they get very cranky. This makes our staff very nervous and there have been incidents of other customers telling off families with noisy children. Our staff dare not request parents to control their children."

Ayaz (Okra) specifies timings for children at his restaurant thus: "Children are allowed at 7.30pm for dinner and 12.30pm for lunch and we expect them to leave in an hour and a half, by 8.30 - 9pm as they tend to disrupt the other diners."

3) What about those employed as domestic staff?

"Don't bring [your house help] and ask us to seat them without food at a table," asks Lal's.

Ayaz Khan (Okra) says domestic staff are welcome as long as they are treated well by the family. "Since we are a small space, customers should also book a seat [on the same table] for the domestic staff and treat them properly. Since there is no play area for kids, the domestic staff have to sit at the table and be dressed appropriately."

Sohail Salahuddin of Lahore Social thinks it's important to take out your kids for a meal yourself without any domestic staff: "When children go out to restaurants and sit in public, that is when they learn how to interact with other people, how to behave in a civilised manner and how to conduct themselves amongst others. Children gain some of the most important life lessons while sitting across a dinner table from a loved one."

4) Is it tacky to ask for a doggy bag?

Restaurant owners encourage customers to take their leftovers home to minimise wastage.
Restaurant owners encourage customers to take their leftovers home to minimise wastage.

Asking for your leftovers to be packed is totally okay.

"Considering that you paid for your food, you should be able to enjoy it wherever you want," says Sohail Salahuddin (Lahore Social).

But don't let yourself go overboard. There are instances when packing requests have been excessive, reveals Nilofer Saeed (Neco's): "It's not okay to ask for your food portions to be topped up from the kitchen when packing or ask for items from a buffet to be packed and taken home."

5) How late can you be for a reservation?

Busy restaurants like Monal in Islamabad need customers to be punctual about their reservations
Busy restaurants like Monal in Islamabad need customers to be punctual about their reservations

While some eateries like Lal's or Okra will hold your table for up to 15 minutes, others aren't so patient.

Nilofer Saeed (Neco's) believes that diners shouldn't be late more than 5 minutes for a reservation. "It inconveniences those who have reserved the same table for 50 minutes after you. Other customers waiting for their tables also create a fuss when they see empty tables."

"You should keep the restaurant informed if you're being delayed 5 or 10 or 15 minutes," adds Sohail Salhuddin (Lahore Social). "Anything other than that, you can expect your reservation to be cancelled or your table turned over to another person."

One problem Ayaz Khan (Okra) has noticed increasingly is last minute cancellations. If you wish to cancel your reservation, do it a few hours before your given time.

6) And how long can you occupy a table?

The popularity of restaurants like Kolachi means that you can't hog their tables for too long! — Photo courtesy Kolachi

It's general courtesy to respect fellow patrons waiting at busy eateries.

Ayaz Khan (Okra) explains how they manage the crowd, "We have a time restriction when people call for reservations due to limited space. It is made clear on the phone that diners have two hours. Some people want to stay for a longer time so they come at 10pm/10.30pm after which less people are likely to come."

7) What's the right way to complain about food and service?

Restaurant owners and managers want to know when their kitchen has slipped up.

Ayaz Khan (Okra) says, "If the food is bad they should call the manager and complain about it. We believe in immediate damage control. For a place like Okra where we're charging so much, the service and food have to be equally good, so we are always careful and train our staff."

But it's important to raise complaints at the right time.

"You should let managers know about that a meal is unsatisfactory before eating it. You can't finish your whole meal, then say it's bad. That doesn't help anyone," says Sohail Salahuddin (Lahore Social).

8) How should a customer interact with their server?

"Ask their name and address them with their name. They'll appreciate respect and you'll get better service," recommends Fouzia Siddiqui (FLOC).

Sounds like simple manners, but they're glaringly missing in diners in our part of the world, observes Sikander Rizvi (Xander's).

"They say, the way you treat a server at a restaurant speaks volume on the kind of character you have. I've seen people whistle and snap fingers to waiters and find that extremely deplorable."

Why is Pakistan importing the horrible American custom of tipping? In Australia, there is no tipping in 99% of restaurants. The restaurant owners are expected to pay the wait staff a reasonable wage up front instead of passing the buck to customers. Even the tax is included in the price shown. In Australia, the price you see on the menu is what you actually pay.

If you and other restaurateurs are 'really' so much concerned about your servers conditions (which must be appreciated), then please pay them accordingly and do not make excessive profits for yourself only....share some of them with your staff........rather then leaving them only on the tips of your customers and lecturing customers to pay them well.

@itrat khaliq It's just like as we treat our kids. We provide our kids with everyday necessities, take care of them, stand beside them in every step of of their daily challenges but still when they do something extraordinarily good we prize them with EXTRAS. Similarly the server is our dependent for the time he/she is serving us at a particular restaurant, it's our responsibility to take care of them, if we don't then we won't have loyal and hardworking people to serve us and every time we go to the restaurant we'll see a new face who doesn't know us and we have to familiarise ourselves and our MOODS to a new person. As mentioned in the article that the servers like to be addressed by their names and so do we, when we hear our names (Mr XX HAPPY) or (Mr YY SMILY) from a server, we appreciate that he has remembered us from our last visit. Lastly there are a lot of Fast Food Restaurants where we don't have to pay tips, we have an option to go there.

Well, tip @ 5-10% is a nice gesture. But what about the new trend, service charges in bill. Is it a forced type of tip. Means you pay for Food+Tax+Service charges+Tip. So you have to pay the servers pay, and again tip them. Mostly the restaurant owner pay very meager amount to their employees. There must be a minimum wage structure for them according to the food prices at that restaurant.

This is similar to our leadership who does not want to give anything to the country but want to get everything for themselves and their children. People who do not even pay fair wages to their staff how can you expect them to use high quality ingredients in their over priced menu? Garbage in garbage out.

Customers should either not bring their domestic help in the restaurants if they cannot treat them well, in Pakistan one can witness this often. Domestic staff is not the responsibility of the restaurant owners, customers need to learn the protocols and some basic human decency. Coming on time is equally vital, these places are not public parks, you book a table, make sure you show up on time and leave after having dinner rather than hanging out till mid night, restaurant owners are running a business, these places are not grannies' backyard where you can stay till whatever time. On the matter of tips, pay your employees well a decent wage rather than passing the busk on customers. You charge highly, pay for their work, service is part of their job not an add on. Customers are paying for food/service. Generally people tip when the service is good and the food is of quality, this should be at the will of customer not mandated by petty owners who do not want to be fair to their workers.

Restaurants in PK A family operating a desi Chinese restaurant in islu never accepted tips. Wife cooked, husband took orders, managed cash and adult kids served. Complaint is poor treatment of staff. (Some) guests mistreat domestics, likewise restaurateurs their staff. Gratuity should be equitably distributed from a pool. Restaurateurs should match guests' tips. Servers are key, but janitor, security guard, valet, gardener & kitchen staff all contribute to overall experience. Some eating places are factories - fast in fast out, but when you go out with family and friends it is the overall experience that mayters. Servers' inattention is highest crib. Why must guests try get attention be it rudely or politely? HRD is an investment. Gratuity is optional based on overall delightful experience. Not goonda or poverty tax.

Please do not try to enforce US culture of tipping in Pakistan. If the prices are already too high, the quality and service is already included. There is no need to pay extra for the same. It is the responsibility of the business owner and not the customer to pay the restaurant/cafe's staff. If I want to tip a waiter/server for extra-ordinary service, I'll do so in cash directly to her/him. Never as percentage of the total bill to the restaurant. Also, it is polite to include a note in menu which taxes and extra charges will be added. I once received a bill with two different taxes and service charges added OVER an already expensive prices. Well, paramedics, chemists, bus conductors, security guards and many other more helpful professions deserve more. Could you imagine a business owner (say a hospital MD) asking you to tip (more) to his staff. Just to add my view on above. Tips: 14-30% are way too much, considering the fact that the tip is not waiter's salary but the customer pays out of courtesy and overwhelming services any server renders. Plus, eatery owner should be mindful not to earn from tips as many a times they split the tips into three parts. I-e Restaurant owners, waiters and chef(Kitchen staff). When owner is charging, chef has to cook his best which is reflected in the bill than why hit the waiter's additional hard earned income# Complains: Restaurants never pay heed to rectify, they listen and simply excuse with complimentary low value items or starters. Deliver what you charge for should be the focal point of concern for restaurants

They charge you immoderately for everything without clarifying the taxes. While taxes are deducted separately at many places, they are still cited as a justifiable excuse for their high prices. There is no criteria and body to regulate their pricing policies and they set prices as they will. People are within their right to take matters to social media when they feel that they have been let down.

This is the second time I have seen this article surface. Tipping is entirely wrong and denies employees their right to fair wages. It is an onus on the employers to take care of their employees, not the customers.

These restaurant owners be asked how much do they pay to their waiters and servers. The food industry is making 100% profit. If they had their way, they would rather not pay and ask customer to pay 50% of the bill. Servers are not doing any favour to customers. They are employees of the owners, whose duty should be to train them etiquettes, dress them clean and pay them well. Rather than putting on demands on customers. Most of the customers, if they are served well pay about 10% tips. An average bill of a group of 4 persons bill is not less than 5000. Therefore a tip of 500 is no mean. And if a server serves about three tables in his duty hours, he makes about 1500 a shift. Adding that to their pay, if they are paid should make a decent low income living.

"[Servers] work extremely hard and long hours to serve the customer," he says. Which means you need to pay them decently. Restaurants are simply paying very low wages to staff and expecting customers to fill the gap they leave

#1 quality of food is not in wiatier's control, one may complain to the manager, but do not penalize the waiters #2 " Sikander Rizvi (Xander's) reasons that tips are important because "it's usually half, if not the majority, of servers' income." Give me a break Sikander I am paying for your service, YOU should pay your staff #3 above not withstanding and lets not use the the poor waiter to justify "non tipping".. if you can afford to pay for a meal out, you CAN afford to pay the GST as well as the TIP, dont short change the poorest guy on the totem pole #4 by all means do brind you "massi/nany" to the resturant, but have the decency to let her order. Heck our single meal is as much as their whole month's salary

Why tip, restaurants charge the customers not just for the food but for the service as well, then why you are expecting the customer to pay an additional 20%. Surprised by one of the owners who said tip makes up to almost 50% of the employee's income so customers should give tip. We are not coming to your restaurants to do charity. We are paying you for the food and service and if you feel your employees are not paid well then it is your job to pay them for the services that YOU hired them to provide.

Just check the audacity of restaurant owners to lecture customers to take care of THEIR workers. If you are that concerned, increase their pay and add that to the prices of items if you can't share your profits out of greed.

Restaurants and airlines have turned the concept of 'customer focus' on its head. Rather than the businesses adapting their product to the needs of the customer, they are always lecturing their customers on how to be a good customer. And tipping, why can't these super expensive restaurants pay their staff a fair wage?

Tipping should not be a significant portion of the employees' pay. Restaurant owners should pay the employees enough so that they don't have to depend on tipping. Its easy for the owner to put the onus on the patrons to pay the bills, since it is the cheaper option for the owners, but they should keep workers' rights in mind when deciding pricing

Pls read the history of tips and tipping. Here you go educate yourself and your resturant owners. https://splinternews.com/the-racist-history-of-tipping-1798704699 If a resturant owner can't pay his hard working employees honest pay for their long and hard service. Then they should probably shut it down. Saying that its more than half of their pay just shows how exploitative you are given exhorbant prices at most of these resturants mentioned. A very thoughtless article.

Why is tipping expected just because it is done in the US. There is no tipping in the far east, Australia and New Zealand.....The American system is exploitative, servers should be paid adequately by the owners. What about the practice of service charges? Why do the restaurants who have service charges as a separate item on the bill still expect tips? Or perhaps I am wrong and I have been tipping all wrong even when service charges have been included.

@Vishal If the restaurant does not allow the waiters/waitresses to keep the full tips then absolutely NO tipping at all because it all goes to the owner as free money, however if the tips go to the deserved waiter/waitress then 20% should be the norm.

Very interesting. Cafe and restaurant owners making big profits and telling us to pay up to 20% tip on humanitarian grounds, while they are exploiting them by paying a measly salary to their staff. Good thinking. Such restaurateurs would also not be giving good value for money to their clients.

It is a custom and duty of customer to pay a good tip for good service because most of the serving staff is paid very low and if you are dining in poor area please make sure to tip the server and the cook if your food is cooked good and served nicely, one more if you get a food delivered please tip the delivery person because on next order he will be speedy and can grab extra stuff for you. It doesn’t hurt paying few hundred to a hardworking staff.

An important point not to be overlooked is the fact that a GOOD waiter/waitress works very hard to help create a memorable experience for customers, and there are many who go out of their way. Acknowledging this by way of a tip is a very thoughtful and respectful gesture, and is truly appreciated.

My View: 1) How much should you tip? Owners should pay enough to their employees. Discourage the culture of servers dependency on extra money. 2) What's the deal with bringing children to restaurants? Parents need to be mindful of the restaurant's environment (other customers) and take care of their children 3) What about those employed as domestic staff? 100% agree with Ayaz Khan (Okra). 4) Is it tacky to ask for a doggy bag? Bring the container to the table and ask customer to fill it for what they want. This will solve all problems. Customers not to think its disgrace for them. Make it norm. 5) How late can you be for a reservation? Zero min. As a nation, we need to learn punctuality desperately. Serve the person who is standing there than a person who didnt show up on time. 7) What's the right way to complain about food and service? Agree with Ayaz Khan (Okra) and also put your one liner on other platforms (google etc.) so others know and owners be vigilant next time.

So, the waiters are not paid minimum wages by the owners, but the customers are expected to pay on top of the entire bill? Most restaurant owners in Pakistan do not give you the full bill with STRN because they aren't registered as businesses. This means that the customers are paying the direct and indirect taxes without getting any documentary validation while the owners are evading taxes. 'Celebrities' who are giving all the suggestions about tipping are privileged, entitled and mostly unaware of the ground realities of Pakistan.
